For the syrup, we submerge underripe green ume plums in sugar, periodically agitating the mixture as they release their fragrant juices. The result is a sour-sweet refresher that is common in Japanese pantries. These Delights have a tart, floral flavor that beautifully compliments the botanical aroma of our sun-grown flower.
